gerunds as subjects即“动名词作主语”
动名词，也称v-ing form，顾名思义，就是在动词后面加-ing使其变成名词，让其能充当主语成分
第一句话it is important to understand...因为主语（understanding the customs in different cultures）太长，所以用了代词it作主语
变化成动名词作主语的话，即把it去掉，把原来的很长的名词还原到主语位置上来，但主语应为名词形式，所以需要把动词understand变为understanding，后面不变
后面的这句话，eating已经是动名词作主语了，如要变成it做形式主语的样子，是It is rude to eat with your fingers in some cultures.

eat （动词）=> eating （动名词）
