1、用冷水把绿豆泡一晚上,水要盖过绿豆一寸以上。

方法:先把绿豆用温水浸泡二十分钟、洗干净
把绿豆随水一起烧开,中间不断加水,因为绿豆会不断吸水,反正偶做完整个程序用了三份之一桶的桶装水
等绿豆吸水吸够后,加水使水面比绿豆高一点,猛火加热,大概十五分钟后,绿豆壳就会自动浮在水面上,用勺子小心盛走绿豆壳,也是要不断加水,因为猛火状态下很易水干
几次盛走绿豆壳后,加水用中火加热,使不易分解的纤维质也会浮在水面上,也把它们弄掉。偶今晚做的8个人的份量,盛出来的绿豆壳+纤维质有两斤多重~剩下的几乎只看到是汤的
从烧水开始半小时后,上面几道工序可完成,再加热十分钟,这里差不多出现“沙”状了
出现沙状后,加进黄糖,加多少视各人口味而定,然后再用中火加热二十分钟,中间每隔五分钟要用搅动一次锅底,因为沙状的豆肉容易沉聚在底部可以吃了
