know of sth 意思是 “了解到某事/听说某事”。known of sth. 是由 know of sth. 派生出来的形容词短语，所以 of 不能去掉。此处的 the best known of the exams 意思是 “(剑桥英语考试是) 听说过的最好的考试” 。

The cambridge english examinations are probably the oldest and the best known of the exams for foreign students of english.
加of的原因是（考试中的）意思。
只是“之一”而已。追问那是不是可以这么理解 the oldest and the best known (exam) of the exams
