如同most students = most of the students
这里的many of the exotic items = many exotic items

“as+形容词+a(n)+可数名词单数+as”的结构对于many这个词来说，可以变为：
“as + many + 可数名词复数 + as”的结构
于是句子就变成
loaded with as many of the exotic items as they can carry =
loaded with as many exotic items as they can carry
其实还是符合结构的。

有时候也不必太过注意语法，看懂为上。呵呵
